Ingredients:

  • 500 g chicken breast fillet, cut into cubes
  • 1 red pepper, cut into pieces
  • 1 green pepper, cut into pieces
  • 1 yellow pepper, cut into pieces
  • 1 zucchini, cut into pieces
  • 1 onion, cut into pieces
  • 200 g mushrooms, halved

For the marinade:

  • 3 tablespoons olive oil
  • 2 cloves of garlic, finely chopped
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon paprika powder
  • 1/2 teaspoon ground cumin
  • juice of half a lemon
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • salt and freshly ground black pepper
  • A pinch of cayenne pepper


Preparation:

1. Prepare the marinade:

In a large bowl, mix together olive oil, garlic, ginger, paprika, cumin, lemon juice, honey, soy sauce, salt, pepper and cayenne pepper. Add the chicken cubes and let marinate in the refrigerator for at least 30 minutes, ideally overnight.
