This dish offers a harmonious combination of juicy lamb loin, crispy fried potatoes and fresh grilled vegetables. A true feast for the palate - easy to prepare and incredibly delicious!

Ingredients:

For the lamb loin:

  • 1000 g lamb loin
  • Coarse sea salt
  • other spices as desired

For the grilled vegetables:

  • as desired, e.g. cherry tomatoes, peppers, carrots, zucchini, etc. ...
  • 3 tablespoons olive oil
  • sea ​​salt

For the fried potatoes with red wine:

  • 1 kg potatoes, mainly waxy
  • 6 tablespoons sunflower oil
  • 6 shallots
  • 100 g bacon cubes
  • 150 ml dry red wine
  • 3 tablespoons red wine vinegar
  • ground rosemary

Preparation:

1. Prepare lamb loin

Take the lamb loin out of the fridge one hour before grilling. Salt the lamb shortly before cooking.

2. Grill lamb loins

As soon as the grill is hot, place the meat on the grill over the flames. Let the lamb sear on both sides for about two minutes. Meanwhile, prepare the grilled vegetables and season them with salt.

3. Let the meat simmer

Place the lamb to the side of the grill so that the meat only receives indirect heat. The core temperature of the meat should be between 58 - 62 °C, which you can measure with a probe thermometer. As soon as it has reached the desired temperature, remove the meat from the grill. Season the lamb with pepper before serving.

4. Prepare the potatoes

Peel the potatoes and cut them into slices about 0.5 cm thick.

5. Fry potatoes

Fry the bacon and onion in a pan. Once the bacon is crispy and the onions are translucent, you can set them aside. Then lightly fry the potatoes in batches and then put them in a bowl.

Put sunflower oil in the pan and let it heat up, fill the pan 1/3 full with potato slices and turn them constantly until the potatoes have taken on color. Add a little salt to the potatoes. Do this until all the potatoes are done. Then add the bacon and onions to all the potatoes.

6. Finish

Put everything together in a pan and pour the red wine vinegar over it. Bring to the boil and add the red wine. Season the fried potato pan with pepper. Let the contents simmer on the lowest heat until the potatoes are cooked. Sprinkle the frying pan with rosemary.
