Ingredients:
- 1.5 kg pork shoulder
- 2 large onions, roughly diced
- 4 garlic cloves, finely chopped
- 250 ml BBQ sauce
- 250 ml vegetable stock
- 2 tablespoons brown sugar
- 1 tbsp paprika powder
- 1 tsp mustard powder
- 1 tsp ground caraway
- 1 tsp chili powder
- Salt and freshly ground black pepper
- 2 tbsp apple cider vinegar
- 1 tbsp Worcestershire sauce
- Optional: 100 ml dark beer or cider
- Fresh herbs such as thyme or bay leaves
Preparation:
1. Prepare the marinade:
Combine brown sugar, paprika, mustard powder, caraway seeds, chili powder, salt, and pepper. Rub the mixture thoroughly into the pork shoulder to intensify the flavors.
2. Prepare the hobo stove:
Light your hobo until you have an even glow.
3. Cook pulled pork:
Place the marinated meat in a large, ovenproof pot. Add onions, garlic, BBQ sauce, stock, apple cider vinegar, Worcestershire sauce, and beer or cider, if desired. Then place fresh herbs on top of the pork shoulder. Cover the pot and place it on the hobo. Let the pulled pork cook slowly for 4-6 hours until tender.
4. Finish the pulled pork:
Remove the meat from the pot and shred it into individual strands using two forks. Toss the shredded meat with the sauce from the pot to keep it moist and flavorful.
5. Serve:
Serve the pulled pork on fresh rolls or as a main course with sides like coleslaw or a fresh salad. Garnish with additional fresh herbs for a perfect finish.
