Grilled cod fillet with cocktail tomatoes

Fresh fish, aromatic herbs, and crispy ciabatta – enjoyment couldn't be simpler! With the FENNEK 2.0 and the plancha, this recipe is child's play. Bring Mediterranean flair directly to your grill, whether camping, in the garden, or on the balcony.


Ingredients:

  • 1 cod fillet
  • salt and pepper
  • 2 tbsp vegetable oil (e.g. rapeseed oil)
  • 1 tsp herb mix (parsley and dill)
  • Juice of half a lemon
  • 1 stalk of small cocktail tomatoes
  • 2 slices of ciabatta

Preparation:

1. Prepare the grill:
After you your FENNEK 2.0 Once you've set it up, light the firelighters and place the charcoal grate on top. Fill with the desired amount of charcoal or briquettes. Once the embers have reached the desired temperature, prepare your grill for subsequent use of the plancha .

2. Prepare the plancha:
Rub the hot plancha with vegetable oil to prevent it from burning.

3. Grilling fish:
Season the cod fillet with salt, pepper, and herbs. Then place the fish on the hot plancha and grill it on both sides until golden brown.

4. Roast tomatoes:
Place the cherry tomatoes directly on the plancha. Drizzle them with a little oil, season with salt and pepper, and let them roast nicely.

5. Toast the ciabatta:
Place the ciabatta slices on the already oiled plancha and toast them until crispy.

6. Serve:
Drizzle the cod fillet with the juice of half a lemon. Then arrange everything together on a plate.
